My husband and I love to make treats and snacks for gamedays! Today I am sharing two recipes: Robby’s Taco Dip and Mallory’s Rice Crisps Bites.
Robby’s taco dip is a staple in our house and today I am going to be sharing two versions of the recipe. The recipe itself is gluten-free but if you are like me and cannot do dairy then I added a dairy-free version for you as well!
I hope you love this recipe as much as we do!
ROBBYS TACO DIP
- INGREDIENTS:
- Two Bricks of cream cheese (2 cups of gluten-free cream cheese substitute)
- 25 ounces of mild taco sauce (I love the FODY brand Taco Sauce and Robby uses Ortega)
- One can of 3.8 ounces of black olives or kalamata olives (the sliced cans make this super easy!)
- Four cups of shredded mild cheddar cheese or a shredded cheddar vegan cheese substitute (Miyokos brand makes a great alternative)
- One cup of cherry tomatoes
- One 8 oz. bag of shredded lettuce
- One bag of your favorite tortilla or grain-free tortilla chip substitute chip!
- DIRECTIONS:
- Using a mixer blend cream cheese and taco sauce together until smooth
- Spread mixture into a 10×15 inch pan (we use a cookie sheet pan)
- Spread the bag of lettuce over the taco sauce mixture evenly
- Cut up the tomatoes and spread the tomatoes and sliced olives evenly over the lettuce
- Spread the cheddar over the top (Robby usually does this but for fun made a KC design, so as always have fun with your creation!)
Pair with your favorite brand of tortilla chips (Robby loves Tostistos Cantina and for a grain-free option Sieta makes a great cassava chip)
Mallory’s Rice Crisps Treat Bites- Kansas City Chief inspiredĀ
This recipe was so fun to make! It’s super easy and you can make it for any team color! It is a dairy-free and gluten-free treat option!
- INGREDIENTS:
- 6 cups of rice crisp cereal ( I love using a brown rice crisp alternative)
- Watkins Food Coloring ( I love this one because there are zero artificial dyes)
- One teaspoon of vanilla extract
- 7 cups of small marshmallows (typically this recipe calls for 5 1/2 cups but… I like extra marshmallows!
- Three tablespoons of a vegan butter substitute
- DIRECTIONS:
- Melt butter over low heat in a saucepan and slowly stir marshmallows in until melted
- Slowly stir in rice crisps
- Once everything is mixed let sit for about ten minutes to cool
- Using 3 medium mixing bowls separate the crisps evenly into bowls and use red and yellow food coloring to color the crisps
- Stir the food coloring evenly
- Once the colors are stirred in, use a cookie sheet pan and create little balls of each color
- Let them sit for about 30 minutes and place them into a bowl
I added a picture of some of the gluten-free and dairy-free items I like to use. Sprouts has a great gluten-free marshmallow option. I love the Watkins brand food coloring and Miyokos butter is great and is also a great alternative for cream cheese for the taco dip. Nature’s path organic is a great brown rice crisp cereal to use for the crispies.
I hope you guys enjoy these recipes for your next game day party or get together!
